Knowing how to cut-up a chicken is a fundamental kitchen skill. You can definitely purchase it already cut-up, but it’s a lot less money to buy the bird whole, AND you get the extra bones and back to make stock and soup. It’s a win all around.

Each student will learn to butcher their own whole local chicken. This class will include anatomy, a variety of cutting techniques and the best uses for each part. We will also cover storage and handling. We will not be cooking the chickens we cut, students will take home their work to prepare at home.

This class will be held at Henning’s Local, located at 6 Old County Road, Cochecton, NY 12726.
