October 27 - The Need to Knead - Breadmaking 101


October 27, 2018 10am - 2pm

Spend the morning learning the technique behind baking artisan breads. We will make:

Cinnamon Raisin Loaf, Buttery Dinner Rolls, 4-Strand Challah Bread, Oat & Wheat Sandwich Bread (great for Slicing and Toasting) and a Crusty No-Knead Boule.

We’ll also make a few simple spreads to go with the breads; Caramelized Red Onion Jam, Homemade Ricotta and a Spicy Carrot & Fennel Chutney.

Students will learn - Mixing yeasted doughs, Ingredient Functions, Using Different Flours and Grain, Kneading & Scaling, Shaping & Rounding, Proofing & Fermentation…

This class will be held at Henning’s Local, located at 6 Old County Road, Cochecton, NY 12726.
